Delish Summer light meals with Nicholas Vahe

During the warmer months there are many fresh ingredients around to indulge in. With the help of Nichols Vahe we will show you a few recipes to keep your energy levels good and your body feeling light over the warmer months.

Beetroot Carpaccio

This recipe is great as a starter or for a light meal. The recipe is super easy and it wins some extra bonus point for those who are vegetarian. Beetroot Carpaccio gives off a vibrant colour to your table with lots of fresh goodness.
Serves:Cook time: 50 mins  Difficulty: Easy
Beetroot Carpaccio
2 Large beetroots
1 tbsp capers
1 dl Goats cheese or feta crumbled
1/2 red onion, finely chopped
Nicolas Vahe Glaze- Forest Fruit
Water cress or rocket
Nicholas Vahe Salt and Pepper- Garlic and Red Chilli Pepper
Boil the beetroots with the peel in salted water. When the beetroots are tender after 45 mins,  slice them thin with a mandolin. Place the slices in layers on a tray. Crumble the feta or goats cheese over the breetroots. Add capers and the finely chopped red onions. Pour Nicolas Vahe glaze over the dish to your taste. Garnish with cress or rocket and sprinkle with nicolas vahe salt and pepper

Lebanese Tabouleh With Greens

This recipe can be served as a side to many main meals or just as a whole meal. The flavours combine really well together with a mix of fruity apricot and fresh mint. This dish is great to store in the fridge as left overs, as all the flavours mix over time, just drizzle some olive oil over and serve.

Serves:Cook time: 30 mins  Difficulty: medium

Labanese Tabouleh
2-3 shallots
1 handful brown and dried apricots
2 tomatoes, without seeds
1/4 cucumber without seeds
4 carrots
2-3 tbsp Nicolas Vahe Olive oil/ lempon
250g Couscous
Some fresh mints, chopped
Salt and pepper
Squeeze fresh lemon juice on top
Finely chop shallots, apricots, tomatoes, cucumbers and carrots. Saute the shallots and apricots in an ample amount of olive oil . Add couscous and a little salt and stir for 1-2 minutes. Add boiling water gradually.
Turn off the heat and stir carefully. Add some more water if necessary but remeber that both teh cucumbers and tomatoes release liquid when added to the mixture. Add tomatoes, cucumbers, carrots and mint and stir to mix. Put a lid on the pan and leave to rest for 5 minutes. Remove the lid and add some olive oil. Season with Salt and pepper

Tagliatelle with Olives, Tomato and Flat Leaved Parsley

Who doesnt love a good pasta? This dish is super easy to make and delicious to share with family and friends. Are you in a rush and dont have much time then this dish is pefect for a quick fix.
Serves:Cook time: 25 mins  Difficulty: easy
1 pack of fresh tagliatelle
1 glas Nicholas Vahe tomato bruchetta
Nicholas Vahe Salt Basil
2 large hanfuls flat- leaved parsely
Handful Roasted almonds or pine nuts
1 Jar of kalamon olives
Nicolas Vahe red wine Balsamico

Boil the pasta according to the instructions on the packet. Mix the pasta with Nicolas Vahe Bruchetta with tomtoes and chopped olives. Sprinkle the remaining ingredients on the dish, and top with Nicholas Vahe Balsamico and olive oil.
